Blackened Fish Taco Bowls
These blackened cod taco bowls have the fun of tacos without the mess. Plus they are easy to make!
Ingredients
- 2 wild caught cod filets
- 2 cups grain of choice, I used quinoa
- 1 bag slaw mix
- ½ cup chipotle mayo, I used Primal Kitchen Foods
- 1 lime
- 1 cup refried beans , Find my refried beans recipe on my page
- 1 handful fresh cilantro, chopped
- salt & pepper , to taste
Instructions
- Mix up slaw, chipotle Mayo, half of lime juice, salt, pepper, and a little bit of water. Place in refrigerator. Follow quinoa package and cook accordingly.
- Season cod filets with olive oil, blackening seasoning, salt and pepper. Put in air fryer at 375 for 10 minutes.
- When the fish is done assemble the bowls and top with desired toppings!
