Spicy Italian Pasta Salad

Italian Pasta Salad
Memorial Day is coming up which means grilling season is here! My favorite part of the summer is all the family cookouts and there is no better side to your cookout than this spicy Italian pasta salad.
Ingredients
- 1 box pasta, cooked
- 1 pint cherry tomatoes, chopped
- ½ red onion, diced
- ½ cup roasted red peppers
- ½ cup mild banana peppers
- 1 can artichokes, drained & chopped
- 4 oz hard salami, cubed
- 1 handful fresh parsley, chopped
- ½ cup olive oil, extra virgin
- lemon juice, 1 lemon
- 1 tbsp crunchy chili onion crunch oil, optional
- 1 tsp oregano
- salt & pepper, to taste
Instructions
- Prep all of the ingredients. Add everything up until the olive oil into a bowl and mix completely.
- In a small bowl, mix together olive oil, lemon juice, crunchy chili onion oil, oregano, salt and pepper. Stir until fully combined.
- Pour dressing over pasta salad and mix until evenly coated. Enjoy!
