These are seriously the best sheet pan steak fajitas! They’re quick, easy, and done in less than 20 minutes.
Ingredients
- 3 tbsp avocado or olive oil
- 2-3 cloves garlic, minced
- juice from half of one lime
- 2 tsp chili powder
- 2 tsp cumin
- salt, to taste
- 2 large bell peppers, sliced
- 1 large red onion
- 1 lb flank steak
Toppings
- avocado
- fresh pico
- microgreens
- guac
- grain free tortillas
Instructions
- Preheat oven to broil and move the rack to the upper 1/3 of the oven. Drizzle the sheet pan with a little olive oil or line it with foil and drizzle with olive oil. In a small bowl combine all of the spices.
- Add the sliced peppers and onions to the pan and drizzle with 1 tbsp of olive oil, half of the spice mix, salt and pepper. Toss together until coated, then spread them into a single even layer. Broil for 7 minutes or until almost tender.
- Remove pan from the oven and push the peppers and onions to one side. Add the steak to the pan and sprinkle on the remaining spice mix, 1 tbsp of olive oil, salt and pepper. Toss until coated. Spread into a single layer and broil for 7-10 minutes or until the steak is cooked to your preference.
- Remove from the oven and squeeze lime juice over everything. Let the steak sit for about 5-7 minutes. Serve with tortillas and toppings of choice.
