Roasted Carrots with Tahini Sauce
Perfectly roasted carrots with tahini sauce are the perfect simple and delicious side dish to accompany any meal. I absolutely love roasted carrots on their own but when paired with this creamy garlic tahini sauce you truly get the most incredible flavor combination ever.

Ingredients & Substitutions
- Carrots. 1 lb of large carrots, peeled. Thin ones work well here, if you have thick large ones, slice them lengthwise.
- Olive oil. 1 tbsp of olive oil for roasting the carrots and 1 tbsp for the tahini sauce.
- Salt & pepper. 1/2 tsp salt and 1/2 tsp pepper to season the carrots. Salt and pepper for the tahini sauce, to taste.
- Slivered almonds. These add a delicious crunch to the recipe.
- Fresh herbs. Fresh parsley and dill enhance the flavor.
- Garlic. 4-5 cloves of garlic.
- Tahini. 1/4 cup of tahini. My favorite is Soom Foods tahini.
- Apple Cider Vinegar. 2 tsp of apple cider vinegar. This adds a little tang to the tahini sauce.
How to Make
Step 1
Preheat oven. Preheat oven to 400. Season carrots with olive oil, salt, and pepper. Spread on a greased baking sheet.
Step 2
Roast the carrots. Bake the carrots for about 20-25 minutes, tossing halfway through.
Step 3
Make the garlic tahini sauce. While the carrots bake, make the sauce. Add all ingredients to a high speed blender or food processor and blend until smooth. Slowly add cool water to thin until you reach your desired consistency. Set aside.
Step 4
Serve & enjoy roasted carrots with tahini sauce! Spread garlic tahini sauce on a plate then add the roasted carrots on top. Garnish with fresh herbs and slivered almonds.

- When choosing carrots, try to choose ones of equal diameter, and keep in mind smaller ones can be roasted whole, so I try to get these. If carrots are too thick or large, slice them in half lengthwise.
- For best results use a really smooth, runny tahini. I only use Soom Foods. Slowly add cool water to dressing until you reach your desired consistency.

Allow to fully cool and then serve in an airtight container in the fridge for up to 3-4 days.
