Breakfast Hash

This Breakfast Hash is packed with veggies, protein, fiber, and and some fresh greens. It’s the perfect weekend brunch — is tasty and easy to make and customize using whatever veggies you have in your fridge. A delicious, hearty breakfast recipe!

Ingredients
 

  • 1 lb red potatoes, cubed
  • 1 bell pepper, diced
  • 1 cup baby bella mushrooms, diced
  • 1 pack chicken sausage
  • 1 tbsp olive oil
  • 4-6 eggs
  • salt & pepper, to taste
  • 1 avocado, optional

Instructions
 

  • Cut up veggies, potatoes & sausage. Season with olive oil, salt & pep. Put the potatoes in air fryer for 15 minutes at 400.
  • Add veggies & sausage and air fry for another 5 minutes. I personally like air frying the veggies bc ya girl likes crispy potatoes.
  • While the veggies are cooking make your eggs. Once everything is done assemble the bowls. Add arugula or spring mix at the bottom, next add the veggie mixture and top with eggs!
