Lemon Poppyseed Mug Cake
It’s starting to warm up and I’m craving all of the spring foods — cue all the lemon & carrot cake things. This lemon poppyseed mug cake is GF, DF, and Grain free and is bursting with fresh lemon flavor. Such a perfect light and easy single serve dessert.
Ingredients
- 3 tbsp coconut flour
- 1 egg
- 2 tbsp maple syrup
- 1 tbsp lemon juice, 1/2 lemon
- 1 tsp lemon zest
- ½ tsp vanilla extract
- ¼ tsp baking powder
- 3-4 tbsp water
Instructions
- Mix all ingredients in a bowl. Pour into a greased mug or ramekin. Microwave for 2-2:30 minutes.
- While the mug cake is microwaving make the glaze - 1 tsp lemon juice + 2 tbsp powdered sugar.
- Let mug cake cool before adding the glaze!
