Ground Beef & Veggie Skillet

I have been loving quick and easy recipes like this one recently. All you need is one pan & 20 minutes and you have yourself a delicious dinner packed full with veggies.

Ingredients
 

  • 1 tbsp olive oil, extra virgin
  • 1 lb grass-fed ground beef
  • ½ cup onion, diced
  • 2 cloves garlic, minced
  • 1 ½ tsp dried oregano
  • 1 tsp dried basil
  • salt & pepper , to taste
  • 1 cup zucchini , diced
  • ½ cup summer squash, diced
  • 1 cup fresh green beans, ends trimmed and cut into 1-2 inch pieces
  • 1 (14.5 oz) can fire roasted tomatoes
  • ½ cup cheese of choice , I used organic grass-fed cheddar

Instructions
 

  • Preheat oven to broil.
  • In a large oven proof skillet over medium high heat, heat the olive oil. When the oil is hot add in the ground beef and crumble it with a wooden spoon.
  • Once the beef is almost cooked through add in the onion powder, garlic, basil, oregano and season with salt and pepper. Cook for 1 minute and then add in the rest of the vegetables. Cook for another 4-5 minutes or until the vegetables have softened slightly.
  • Top the ground beef and vegetable mixture with the shredded cheese. Put the skillet in the oven and broil it just until the cheese is melted and golden brown.
