Roasted Broccoli & Kale Salad with Wild Caught Salmon

The only salad recipe you need: Roasted broccoli & kale with a garlic vinaigrette and topped with salmon. It is full of healthy fats, fiber and greens to keep you energized and feeling good. One of my favorite things to do when it comes to salads is adding in any fresh herbs I can think of. Herbs are such a good way to elevate flavor and pack in those micronutrients!

Ingredients
 

  • 2 bunches kale
  • 1 head broccoli, roasted & chopped
  • ¼ cup walnuts, chopped
  • 1 tbsp fresh dill

Vinaigrette

  • 3 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 2 tsp apple cider vinegar
  • 1 tsp dijon mustard
  • 1 clove garlic, minced
  • ½ tsp salt
  • ½ tsp pepper

Instructions
 

  • In a jar with a lid, add in olive oil, lemon juice, ACV, dijon mustard, garlic, salt & pepper. Shake until well mixed and set aside.
  • In a large bowl add in fresh kale and drizzle with olive oil and salt. Massage with your hands to soften it.
  • Then add in roasted broccoli, fresh dill, walnuts, and garlic vinaigrette dressing.
  • Toss the salad so it's fully mixed. Enjoy!
