Spicy Shrimp Pad Thai

Pad thai is one of my favorite things to make because it is so versatile - I love to throw in as many veggies as possible. Pro tip: make it at the end of the week and use any leftover veggies you have to prevent food waste. The thai peanut sauce is packed with flavor and really makes the dish. Plus it is naturally gluten and grain free because of the shirataki noodles.

Ingredients
 

  • 1 lb shrimp
  • 1 package miracle shirataki noodles
  • 1 broccoli crown
  • ½ cup matchstick carrots
  • 1 red bell pepper
  • 4 tbsp gluten-free tamari
  • 1 tbsp almond butter, choose one with a runny consistency
  • ¼ cup green onions , chopped

Instructions
 

  • Heat a large skillet with avocado oil.
  • Add in veggies and saute for about 3-4 minutes. Next add in miracle noodles followed by soy sauce and almond butter. Mix well.
  • Add in the shrimp, stir it up and cook for about 3-5 minutes. Top with green onions and sesame seeds.
