Healthier Sloppy Joes
These sloppy joes are classic comfort food made healthy! Made with grass-fed ground beef and hidden veggies and no added sugars. They are good for you health and full of flavor!
Ingredients
- 1 large red bell pepper, diced
- 1 small yellow onion, diced
- 1 small green bell pepper, **optional
- 2 lb grass-fed ground beef
- 2 tbsp olive oil
- 6 oz can tomato paste
- 3 tbsp coconut aminos
- 2 tsp paprika
- 1 tsp salt
- 1 cup water, add in if needed
Additional
- 1 lb brussels sprouts, cut in half
- 1 lb red potatoes
Instructions
- First, preheat oven to 400 degrees F. Slice brussels sprouts in half and cut up potatoes about 1/4 inch thick and place in a large bowl. Toss with olive oil and salt. Then spread evenly on a baking sheet. Bake for 30 minutes, flipping after 20 minutes.
- While the veggies and potatoes are cooking, start making the sloppy joes. In a large skillet, add red pepper, green bell pepper, onion and olive oil. Cook over low medium heat for about 7 to 8 minutes or until onions become soft.
- Next, add in grass-fed ground beef and cook on medium until brown and crumbly.
- Drain excess fat if needed (I didn't need to but it will depend on the % fat ground beef that you use). Add in remaining ingredients and bring to a boil. Reduce heat and let simmer for at least 15 to 20 minutes, adding more water if mixture becomes too dry.
- Add sloppy joe meat to a bowl or plate and serve with brussels sprouts and potatoes.
