These sloppy joes are classic comfort food made healthy! Made with grass-fed ground beef and hidden veggies and no added sugars. They are good for you health and full of flavor!
First, preheat oven to 400 degrees F. Slice brussels sprouts in half and cut up potatoes about 1/4 inch thick and place in a large bowl. Toss with olive oil and salt. Then spread evenly on a baking sheet. Bake for 30 minutes, flipping after 20 minutes.
While the veggies and potatoes are cooking, start making the sloppy joes. In a large skillet, add red pepper, green bell pepper, onion and olive oil. Cook over low medium heat for about 7 to 8 minutes or until onions become soft.
Next, add in grass-fed ground beef and cook on medium until brown and crumbly.
Drain excess fat if needed (I didn't need to but it will depend on the % fat ground beef that you use). Add in remaining ingredients and bring to a boil. Reduce heat and let simmer for at least 15 to 20 minutes, adding more water if mixture becomes too dry.
Add sloppy joe meat to a bowl or plate and serve with brussels sprouts and potatoes.
