My favorite 20 minute tacos

One thing that we eat on a weekly basis is tacos – they are so versatile, easy and delicious. Most of the time when we aren't sure what to eat for dinner we end up eating these 20 minute beef tacos.

Ingredients
 

  • 1 lb grass fed ground beef
  • ½ red onion, chopped
  • 1 tbsp olive oil
  • 2 tbsp taco seasoning , Look at ingredients! I love using Siete. Or making my own with cumin, cayenne, chili powder, onion & garlic powder.
  • handful greens
  • grain free tortillas, I use Siete or Trader Joes
  • ½ avocado diced
  • handful cherry tomatoes, diced
  • greek (or coconut) yogurt , optional

Instructions
 

  • Heat olive oil on medium until hot but not smoking. Add grass-fed ground beef to brown and then add red onion. Break up pieces of ground beef and heat until fully cooked and onions soften, about 5-7 minutes. Add in taco seasoning and mix fully. Set aside.
  • Build your tacos. I like to heat my tortillas in a skillet on the stovetop until slightly charred on both sides or in the toaster oven, then add greens, seasoned meat, tomato, avocado and drizzle with yogurt.
