Spicy Salmon Bowl with Chipotle Mayo

This Spicy Salmon Bowl with Chipotle Mayo has everything we all love about sushi in a deconstructed, healthy and nourishing bowl.

Ingredients
 

  • 1 lb wild caught salmon filet (or two .5 lb filets)
  • 1 tbsp olive oil
  • 1//2 cucumber, sliced
  • ½ cup matchstick carrots
  • 1 avocado, sliced
  • toasted nori seaweed
  • 1 cup brown rice, cooked

Chipotle Mayo

  • 1 cup avocado oil mayo
  • 4 tbsp sriracha
  • dash lime juice

Instructions
 

To make salmon:

  • Preheat oven to 425. In a large cast iron skillet heat 1 tbsp olive oil. Once super hot, oil should be crackling.
  • Add in salmon, cook for about 3-5 minutes. Once done put in oven and cook for another 5-7 minutes. (Depending on size & thickness of salmon filet).

To make the bowls:

  • While the salmon is cooking, chop up veggies & set aside.
  • Next make the sauce. Mix together all of the ingredients until well combined.
  • Assemble bowls by adding rice, veggies and salmon then top with chipotle mayo.
