This Spicy Salmon Bowl with Chipotle Mayo has everything we all love about sushi in a deconstructed, healthy and nourishing bowl.

Ingredients

lb
wild caught salmon filet (or two .5 lb filets)

tbsp
olive oil
▢
1//2
cucumber
,
sliced
▢
½
cup
matchstick carrots
▢
1
avocado
,
sliced
▢
toasted nori seaweed
▢
1
cup
brown rice
,
cooked
Chipotle Mayo
▢
1
cup
avocado oil mayo
▢
4
tbsp
sriracha
▢
dash
lime juice
Instructions
To make salmon:
Preheat oven to 425. In a large cast iron skillet heat 1 tbsp olive oil. Once super hot, oil should be crackling.
Add in salmon, cook for about 3-5 minutes. Once done put in oven and cook for another 5-7 minutes. (Depending on size & thickness of salmon filet).
To make the bowls:
While the salmon is cooking, chop up veggies & set aside.
Next make the sauce. Mix together all of the ingredients until well combined.
Assemble bowls by adding rice, veggies and salmon then top with chipotle mayo.
