Turkey and Kale Skillet

This one pan meal is easy, delicious and done in under 20 minutes. It is packed with veggies, high in protein and topped with a creamy tahini sauce for some healthy fats.

Ingredients
 

  • 1 lb organic ground turkey
  • 1 cup mushrooms, sliced
  • 1 cup shredded brussels sprouts
  • 1 bunch kale, chopped
  • 1 yellow onion, chopped
  • 1 tbsp olive or avocado oil
  • 1 tbsp minced garlic

Tahini Sauce

  • ¼ cup tahini
  • 2 tbsp lemon juice
  • 1 tbsp sesame oil
  • salt , to taste
  • 1 tbsp water (more if needed)

Instructions
 

  • Heat skillet with olive oil. Add onion and minced garlic. Cook for about 2-3 minutes or until aromatic.
  • Add turkey to skillet. Break up as it is cooking and cook until browned.
  • Add in mushrooms. Cook everything for another 3-5 minutes. Then add kale and place lid over skillet to allow kale and brussels to steam for 2-3 minutes.
  • Remove lid and season with salt and pepper to taste.
  • Assemble in bowl and top with tahini sauce. Feel free to serve it with your favorite complex carb for a balanced dinner!

Tahini Sauce

  • Add all ingredients into a bowl and mix well. Slowly add in cold water until you get the desired consistency.
