This one pan meal is easy, delicious and done in under 20 minutes. It is packed with veggies, high in protein and topped with a creamy tahini sauce for some healthy fats.
Heat skillet with olive oil. Add onion and minced garlic. Cook for about 2-3 minutes or until aromatic.
Add turkey to skillet. Break up as it is cooking and cook until browned.
Add in mushrooms. Cook everything for another 3-5 minutes. Then add kale and place lid over skillet to allow kale and brussels to steam for 2-3 minutes.
Remove lid and season with salt and pepper to taste.
Assemble in bowl and top with tahini sauce. Feel free to serve it with your favorite complex carb for a balanced dinner!
Tahini Sauce
Add all ingredients into a bowl and mix well. Slowly add in cold water until you get the desired consistency.
