Beans Alla Vodka
These beans alla vodka are the perfect meatless meal. All you need is one pan and 30 minutes and you’ll have the perfect, hearty & nutritious dinner. Not only is it delicious but it’s packed with fiber rich butter beans and nutrient packed kale.

Beans Alla Vodka with Crispy Kale
This beans alla vodka dish is a twist on the classic pasta alla vodka.
Ingredients
- 1 tbsp olive oil
- 2 tbsp tomato paste
- 1 tbsp minced garlic
- dash red pepper flakes, amount will depend on how spicy you want it
- 1 can butter beans or navy beans, drained
- 1 (8 oz) can diced tomatoes
- 1 pint cherry tomatoes
- ½ can full fat coconut milk
- 1 cup cauliflower rice
- 3 tbsp nutritional yeast
- salt, to taste
- bunch kale, finely chopped
Instructions
- Heat a skillet to medium high heat with olive oil. Add in garlic, tomato paste, and red pepper flakes. Cook for 1-2 minutes.
- Add in cherry tomatoes and a splash of water. Let cook for about 3-5 minutes to soften tomatoes.
- Pour in white beans, diced tomatoes and cauliflower rice. Stir until combined. Add in coconut milk and nutritional yeast.
- Cover with lid and lower heat to a simmer. Cook for 15 minutes.
- While the stew is cooking, massage kale with olive oil and salt. Add to air fryer and cook at 400 for about 3 minutes.
- Once everything is done, assemble bowls. I like to serve mine with rice or a piece of crusty bread and add the crispy kale on top.

When do you add in the nutritional yeast?
So sorry about the confusion! You add in the nutritional yeast when you add the coconut milk. Just updated the recipe instructions.
