Beans Alla Vodka with Crispy Kale

This beans alla vodka dish is a twist on the classic pasta alla vodka.

Ingredients

  • 1 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 tbsp minced garlic
  • dash red pepper flakes, amount will depend on how spicy you want it
  • 1 can butter beans or navy beans, drained
  • 1 (8 oz) can diced tomatoes
  • 1 pint cherry tomatoes
  • ½ can full fat coconut milk
  • 1 cup cauliflower rice
  • 3 tbsp nutritional yeast
  • salt, to taste
  • bunch kale, finely chopped

Instructions

  • Heat a skillet to medium high heat with olive oil. Add in garlic, tomato paste, and red pepper flakes. Cook for 1-2 minutes.
  • Add in cherry tomatoes and a splash of water. Let cook for about 3-5 minutes to soften tomatoes.
  • Pour in white beans, diced tomatoes and cauliflower rice. Stir until combined. Add in coconut milk and nutritional yeast.
  • Cover with lid and lower heat to a simmer. Cook for 15 minutes.
  • While the stew is cooking, massage kale with olive oil and salt. Add to air fryer and cook at 400 for about 3 minutes.
  • Once everything is done, assemble bowls. I like to serve mine with rice or a piece of crusty bread and add the crispy kale on top.
