Beans Alla Vodka with Crispy Kale

This beans alla vodka dish is a twist on the classic pasta alla vodka.

Ingredients

olive oil

tomato paste

minced garlic

red pepper flakes

butter beans or navy beans

drained

1 (8 oz)
can
diced tomatoes

pint
cherry tomatoes

½
can
full fat coconut milk
▢

cup
cauliflower rice
▢

tbsp
nutritional yeast

salt

to taste

bunch
kale
,
finely chopped
Instructions
Heat a skillet to medium high heat with olive oil. Add in garlic, tomato paste, and red pepper flakes. Cook for 1-2 minutes.
Add in cherry tomatoes and a splash of water. Let cook for about 3-5 minutes to soften tomatoes.
Pour in white beans, diced tomatoes and cauliflower rice. Stir until combined. Add in coconut milk and nutritional yeast.
Cover with lid and lower heat to a simmer. Cook for 15 minutes.
While the stew is cooking, massage kale with olive oil and salt. Add to air fryer and cook at 400 for about 3 minutes.
Once everything is done, assemble bowls. I like to serve mine with rice or a piece of crusty bread and add the crispy kale on top.
