Tomato Basil Chicken Skillet

This tomato basil chicken skillet is the perfect balanced and nourishing weeknight dinner! It is one skillet and ready in under 30 minutes. Plus All you need is a handful of ingredients including chicken, cherry tomatoes, basil and a quality marinara sauce!

Ingredients
 

  • 2 tbsp extra virgin olive oil
  • 1-1.5 lb organic chicken breasts, boneless, skinless
  • 1 jar marinara sauce, look for one with minimal ingredients & no added sugar
  • 1 container cherry or grape tomatoes
  • 1 handful fresh basil, chopped
  • salt & pepper, to taste

Instructions
 

  • Heat skillet with olive oil at a medium heat. Add in chicken breasts and cook until browned, about 5-7 minutes each side. (They will continue to cook as we make the dish).
  • Add in cherry tomatoes. Then pour in marinara sauce and allow to cook at medium heat for about 5 minutes, maintaining a simmer.
  • After tomatoes start to soften and burst. Add in 1/2 handful of chopped basil. Cover with lid and reduce heat to medium, low. Cook for another 3-5 minutes.
  • Sprinkle with more fresh basil and enjoy. I serve mine with brown rice and asparagus.
