Turkey Meatballs with Peppers & Rice
This dinner is a quick, easy and delicious! Meatballs in a tangy tomato sauce with garlic & peppers on top of brown rice – is the cozy meal you didn't know you needed.
Ingredients
Meatballs
- 1 lb organic ground turkey or chicken
- 1 pasture raised egg
- ½ cup almond flour
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
Sauce
- 1 tbsp minced garlic , about 2 large cloves
- 1-2 cup sweet peppers , thinly sliced
- ¼ cup capers
- 1 (14 oz) can plain tomato sauce
- salt , to taste
- 1 cups brown rice, cooked
Instructions
- Mix meatball ingredients together. Roll into meatballs. Heat a skillet over medium high heat. Add a little bit of olive oil. Add meatballs and cook until browned on all sides. Remove from pan and set aside.
- In a skillet add peppers and garlic, plus a little more oil if you need it. Saute for 5-10 minutes.
- Add meatballs into the pan. Stir in tomato sauce and capers. Bring to a low simmer and let it hang out (add a little water if it gets too dry).
- Serve hot with brown rice. I batch cook mine at the beginning of the week with bone broth in the instant pot.
