This dinner is a quick, easy and delicious! Meatballs in a tangy tomato sauce with garlic & peppers on top of brown rice - is the cozy meal you didn't know you needed.
Mix meatball ingredients together. Roll into meatballs. Heat a skillet over medium high heat. Add a little bit of olive oil. Add meatballs and cook until browned on all sides. Remove from pan and set aside.
In a skillet add peppers and garlic, plus a little more oil if you need it. Saute for 5-10 minutes.
Add meatballs into the pan. Stir in tomato sauce and capers. Bring to a low simmer and let it hang out (add a little water if it gets too dry).
Serve hot with brown rice. I batch cook mine at the beginning of the week with bone broth in the instant pot.
