Instant Pot Carnitas with Jalapeño Yogurt Sauce

These instant pot carnitas are seriously packed with flavor and is so tender it will fall apart in your mouth! Hot tip: Top them with jalapeño ranch and your life will be forever changed.

Ingredients
 

  • 1-1.5 lb pork tenderloin, this recipe is flexible & you can double or even triple the pork amount
  • 1 jar salsa verde
  • 1 tbsp garlic, minced
  • dash salt & pepper

Jalapeno Yogurt Sauce

  • ½ cup sour cream
  • ½ cup greek yogurt
  • ½ lemon, juice
  • 1 large handful baby spinach
  • 1 jalapeno , deseeded & chopped
  • 1 tsp primal palate french onion seasoning
  • 1 tsp salt

Instructions
 

  • Cut pork tenderloin into cubes and season with salt and pepper. Set instant pot to sauté setting and sauté pork cubes until browned on all sides.
  • Once all sides of pork are browned add salsa and garlic. Close instant pot and turn to pressure cook for 45 minutes.3. When the instant pot is done allow to vent. Pull apart pork (you can use two forks in the instant pot).
  • Most important and life changing step. Heat up a skillet on the stove to high heat. Place the pork on the skillet and cook until pork gets crispy. Only takes a few minutes.
  • I added my carnitas to a bowl with veggies, rice & jalapeno ranch. Would also be amazing as a sandwich or tacos.
