Caramelized Pineapple with Vanilla Ice Cream

The temperature is dropping, but we're channeling all of the tropical vibes with this caramelized Del Monte Gold Pineapple topped with vanilla ice cream and granola!

Ingredients
 

  • 1 Del Monte Gold Pineapple, peeled, cored and cut into 3/4 inch thick slices
  • ¼ cup clarified ghee (or butter), melted
  • ¼ cup coconut sugar
  • dash cinnamon
  • ¼ cup grain free granola, for serving
  • vanilla ice cream, for serving

Instructions
 

  • In a small bowl, whisk together the coconut sugar, ghee (or butter) and cinnamon. Brush the sugar mixture over both sides of each pineapple slice.
  • Heat a skillet to a medium high heat. Add in pineapple slices and cook on each side for about 3-4 minutes or until golden brown and tender.
  • Serve immediately. Garnish with ice cream and granola.

Notes

You can also make these on the grill! Preheat grill and coat grates with cooking spray.Place the pineapple slices on the grill in a single layer. Cook for 2-3 minutes per side, or until golden brown and tender.
