Spicy Salmon Bowl with Chipotle Mayo
This Spicy Salmon Bowl with Chipotle Mayo has everything we all love about sushi in a deconstructed, healthy and nourishing bowl.
Ingredients
- 1 lb wild caught salmon filet (or two .5 lb filets)
- 1 tbsp olive oil
- 1//2 cucumber, sliced
- ½ cup matchstick carrots
- 1 avocado, sliced
- toasted nori seaweed
- 1 cup brown rice, cooked
Chipotle Mayo
- 1 cup avocado oil mayo
- 4 tbsp sriracha
- dash lime juice
Instructions
To make salmon:
- Preheat oven to 425. In a large cast iron skillet heat 1 tbsp olive oil. Once super hot, oil should be crackling.
- Add in salmon, cook for about 3-5 minutes. Once done put in oven and cook for another 5-7 minutes. (Depending on size & thickness of salmon filet).
To make the bowls:
- While the salmon is cooking, chop up veggies & set aside.
- Next make the sauce. Mix together all of the ingredients until well combined.
- Assemble bowls by adding rice, veggies and salmon then top with chipotle mayo.
