Ingredients & Substitutions

  • Extra Virgin Olive Oil. This will be used to cook the meat and sauté the veggies for the ground turkey veggie skillet. You can use any neutral oil.
  • Ground turkey. You will need 1 lb of ground turkey. Can sub for ground chicken or pork.
  • Carrots. 4 large carrots, peeled and chopped.
  • Brussels sprouts. 2 cups brussels sprouts, shredded. You can use a pre-shredded brussels as well. Sub with any dark leafy green of choice. Broccoli, kale, spinach, or arugula are all great in this.
  • Zucchini. 1 large zucchini, chopped.
  • Garlic. 2 small cloves of garlic, minced. About 1 tbsp minced garlic or 1/2 tsp garlic powder
  • Tahini. 1/4 cup of tahini. Choose one that is runny and smooth, the consistency matters. I always use Soom Organic Tahini.
  • Apple Cider Vinegar. 1 tbsp apple cider vinegar. This gives some acidity to the dish. Can sub with white vinegar.
  • Salt & pepper. Salt and pepper will be used to add more flavor. Adjust to your taste preferences.

How to Make Ground Turkey Veggie Skillet

Step 1

Roast the carrots. Preheat oven to 425. Toss carrots with 1/2 tbsp of olive oil, a dash of salt and pepper. Spread on a baking sheet and bake for about 15-20 minutes.

Step 2

Cook the turkey. Heat a large skillet with 1/2 tbsp of olive oil. Add in ground turkey and cook for about 5-7 minutes, breaking apart, until browned all the way through. Then add in garlic, sautéing for 1-2 minutes.

Add zucchini & brussels sprouts. Once the turkey is browned, add in brussels sprouts and zucchini. Cover with a lid and allow veggies to steam for about 3-5 minutes.

Step 4

Add the rest of the ingredients. Add roasted carrots to the skillet and mix to combine. Finally add tahini, apple cider vinegar, salt, and pepper. Mix together and add water to thin it out. Adjust seasonings to taste.
