Lemon Poppyseed Mug Cake

It’s starting to warm up and I’m craving all of the spring foods — cue all the lemon & carrot cake things. This lemon poppyseed mug cake is GF, DF, and Grain free and is bursting with fresh lemon flavor. Such a perfect light and easy single serve dessert.

Ingredients
 

  • 3 tbsp coconut flour
  • 1 egg
  • 2 tbsp maple syrup
  • 1 tbsp lemon juice, 1/2 lemon
  • 1 tsp lemon zest
  • ½ tsp vanilla extract
  • ¼ tsp baking powder
  • 3-4 tbsp water

Instructions
 

  • Mix all ingredients in a bowl. Pour into a greased mug or ramekin. Microwave for 2-2:30 minutes.
  • While the mug cake is microwaving make the glaze - 1 tsp lemon juice + 2 tbsp powdered sugar.
  • Let mug cake cool before adding the glaze!
