There are few things I love more than peanut butter so obviously these cookies are a favorite of mine! They are flourless, gluten free, and dairy free. I recommend dipping them in chocolate, thank me later!
Make the cookie dough. Add the sugar, egg, and peanut butter to a medium sized mixing bowl. Stir until combined.
Prep the cookies. Preheat oven to 375 and add parchment paper to a baking sheet. Scoop up dough and roll into about a ball (about 1 inch). Place on baking sheet and flatten with your palm. Use the back of a fork to make criss cross lines on the cookies.
Bake & cool the cookies. Place cookies in the oven and bake for 7-10 minutes. Then allow to completely cool.
Make the chocolate. Add chocolate into a small microwave safe bowl. Microwave for 30 seconds, stir well. You want there to still be some unmelted chips, they will continue to melt as you stir. Add back to microwave for a few more seconds if needed.
Dip the cookies. Once the cookies have completely cooled, dip half in the chocolate. Place on plate and allow chocolate to harden.
Enjoy! After dipping the 4 ingredient peanut butter cookies and letting the chocolate harden, dive in!
Notes
For the best 4 ingredient peanut butter cookies, allow cookies to fully cool before dipping in the chocolate. Once the chocolate sets, enjoy!
To enhance the flavor, add a sprinkle of sea salt.
Choose a runny peanut butter that has only a few ingredients, organic peanuts and salt.
For a smoother consistency, add coconut oil to the chocolate when melting.
Store in an airtight container at room temperature for 3-4 days.
