This is a go-to quick and easy weeknight meal that we have on repeat in our house! All you need are a few simple ingredients and you can make a delicious, balanced dinner in under 30 minutes. It's a healthier take on the Chinese beef and broccoli we all love without the crappy feeling after eating it, that we don't love.
Cook the broccoli. Preheat oven to 425. Season broccoli with olive oil, salt and pepper. Spread on a greased baking sheet and bake for about 15-20 minutes or until slightly crispy.
Cook the beef. Heat 1 tbsp olive oil in skillet at medium, high heat. Add garlic and sauté for a 1-2 minutes. Then add ground beef and cook until browned, breaking apart.
Make the sauce. Add coconut aminos, sesame oil, apple cider vinegar, salt and pepper to skillet. Stir until beef is fully coated with seasonings. Turn down heat and let simmer for about 5-7 minutes.
Combine broccoli & beef. Add broccoli to the skillet and stir until fully combined.
Serve & enjoy! Assemble paleo beef and broccoli bowls. To keep it paleo serve with cauliflower rice and garnish with green onions. If you're not paleo, serve with jasmine rice.
