BLT Chicken Salad
I do not know about you guys but once it starts warming up I crave all of the salads (mainly because I cannot be bothered to turn on my oven). This salad is the perfect light meal on hot days but does not lack in flavor or substance. Think your favorite blt sandwich but in salad form.
Ingredients
- 4 cups hearts of romaine, chopped
- 2 pieces bacon , diced
- ⅓ cup cherry tomatoes, halved
- 1 chicken breast, shredded
- ranch dressing, I use primal kitchen foods
- ½ avocado, diced
Instructions
- Rinse & chop romaine. Pat dry and add to a mixing bowl. Drizzle some ranch dressing (enough to coat the lettuce) and toss.
- Add in bacon, chicken, cherry tomatoes, and avocado. Drizzle with more ranch.
