This healthier take on chicken fried rice is gluten free and grains free but does not lack in flavor! It is loaded with veggies & protein and has quickly become a favorite in our house.
Heat avocado oil in pan at medium, high heat. Place chicken in skillet and add 1 tbsp coconut aminos. Cook for about 5-7 minutes or until browned on all sides.
Remove chicken and set aside, add all the veggies to the pan and cook until hot, add the rest of the coconut aminos.
Place cooked chicken back in the pan and crack two eggs into the cauliflower rice and stir to cook.
