These ice cream cups are a dream! You only need 3 ingredients to make them, and they are low in sugar! You can meal prep them for the week and enjoy frozen.
1pintice cream of choice, I used Enlightened Coffee Toffee
Equipment
1 muffin pan
6 muffin cups
Instructions
In a bowl melt chocolate chips and coconut oil. I melt mine in the microwave but you can also melt in a stovetop pot.
Pour half of the melted chocolate into 6 muffin tins. Place them in the freezer for about 15-20 minutes.
Take the chocolate out of freezer and add ice cream on top of chocolate layer. Next, add the rest of the melted chocolate mixture over ice cream until covered.
Place back into the freezer for 30 minutes. Enjoy!!
