Fresh seasonal produce, creamy basil dressing, and crunchy greens - this farmers market salad is the perfect addition to any meal. This salad is the easiest way eat seasonal produce, support your health, and support local farmers! It is great served as a side dish or paired with a protein for a perfect balanced meal.
Roast the vegetables. Toss the veggies with olive oil and salt then spread evenly on a baking sheet. Bake for about 15-20 minutes. Allow to cool for 5-10 minutes.
Make the dressing. Add all of the dressing ingredients to a bowl and then use an immersion blender. Blend until smooth. If you don't have an immersion blender you can use a high speed blender.
Toss the salad. Add chopped romaine to a large bowl, add in roasted veggies and then toss with dressing until evenly coated.
Serve and enjoy! Serve the farmers market salad as a side dish or with protein of choice for a perfectly balanced meal.
Notes
The kefir gives the dressing such a creamy texture and I highly recommend using it! It is lactose free and gut friendly.
If you are dairy free you can sub kefir with nut milk.
Best served right away. You don't want to prep the salad too early because the warm veggies will wilt the lettuce. If you want to prep the salad early, store the roasted veggies separately and add to salad right before serving.
