Greek Chicken Bake

Ingredients

chicken breasts

sea salt

cracked black pepper

8 oz can
diced tomatoes
,
drained
▢
½
cup
pitted green olives
▢

8.5 oz can
quartered artichoke hearts
▢

tbsp
minced garlic
▢
2
tbsp
fresh lemon juice
▢
2
tbsp
extra virgin olive oil
▢
fresh thyme
,
optional
▢
goat milk feta
,
optional
Instructions
Preheat oven to 425. Season chicken with olive oil, salt and pepper. Place chicken in a 9x13 in pan.
In a large bowl, combine tomatoes, garlic, olives, artichoke hearts, lemon juice, and olive oil. Toss to coat veggies. Pour mixture over chicken.
On top oven rack, bake for 40-45 minutes.
Top with fresh thyme & feta. Enjoy!
