Tender ground lamb, creamy kefir tzatziki, fluffy rice, and fresh mint - these ground lamb bowls are the perfect combination of flavor and texture. They are easy, healthy, and done in 30 minutes. Plus the kefir tzatziki is packed with probiotics making this meal gut friendly!

Instructions
Make the kefir tzatziki. Add the greek yogurt, kefir, cucumbers, garlic, and fresh mint to a bowl. Mix until fully combined. Place in the fridge to chill until you are ready to serve the ground lamb bowls.
Make the meat mixture. Add beef, seasonings, and onion to a bowl and mix with your hands until fully incorporated.
Cook the meat. Heat a large cast iron skillet with olive oil over a medium high heat. Once the skillet is hot, start adding in chunks of the meat. You don't need to form them, just drop spoonfuls into the pan. Cook undisturbed until charred and crispy on the underside, about 6-8 minutes, then flip and do the same on the other side.
Add in walnuts and raisins. Using a wooden spoon, break up the big pieces of meat. Add in walnuts and raisins and lightly toast in the pan with the meat, about 2-3 minutes.
Serve and enjoy! Remove the tzatziki from the fridge and the meat from the stovetop. Add a large helping of the kefir tzatziki to plate then add meat mixture on top of it. Serve with a side of basmati or jasmine rice. Top with fresh mint. Enjoy!
Notes
For best results, serve with warm rice or pita.
Store meat mixture and kefir tzatziki in separate containers in the fridge for up to 3-4 days.
If you don't like lamb you can easier sub with ground beef.
