This spicy tuna salad made with fresh jalapeno is the perfect quick and easy lunch. A take on the classic with a little added heat. I love making this on days when I'm on the go or when I'm meal prepping for my husband. It is incredibly versatile and a crowd favorite.
1tbspjalapeno juice (from jar of pickled jalapenos), optional
Instructions
Make the tuna salad. Add all ingredients in a bowl. Mix until fully combined.
Enjoy! Serve tuna on toasted sourdough with pepper jack cheese and whatever toppings you'd prefer. You can also serve with almond flour crackers or over greens.

For the best spicy tuna salad, mix ingredients together and allow to cool in the fridge for about 30 minutes to an hour. This allows the flavors to meld.
For extra spicy, add 1 tbsp of jalapeno juice from a jar of pickled jalapenos. Or slightly toast the diced jalapeno.
This is super versatile, make it as spicy or mild as you'd like. Also feel free to add in additional ingredients for more flavors!
Store in an airtight container in the fridge for 3-4 days.
