Creamy chicken salad, crunchy apples, aromatic curry seasoning, and a subtle sweetness - This whole30 curry chicken salad is an absolute dream. It is packed with the perfect balance of flavors & textures and couldn't be easier to make.
Make the curry mayo. In a small bowl, mix together Mayo, curry powder, salt and lime juice. Optional to add 1 tsp honey.
Add ingredients to a large bowl. Add chicken, apple, celery, carrot, red onion, and almonds to a large bowl. Pour Mayo mixture over and toss until fully combined Add salt and pepper, to taste.
Enjoy & serve! Garnish the whole30 curry chicken salad with green onions. Enjoy however you'd prefer! I love having mine with almond flour crackers or in a wrap. You can also have it over a bed of greens or in a sandwich.
Notes
To save time, make chicken ahead of time or buy a rotisserie chicken.
Make sure to choose a whole30 approved avocado oil mayo. I love Chosen Foods or Primal Kitchen Foods.
Have fun with it! I love adding in a bunch of crunchy veggies like carrots, celery, red onion, and apples but if you don't like any of those things you can omit them.
Store in an airtight container in the fridge for up to 4-5 days.
