Chocolate Caramel No Bake Oat Cups

These treats are not only delicious but are no bake, made with a few simple ingredients, and packed with protein!

Ingredients
 

Base

  • 1 cup + 2 tbsp rolled oats
  • 1 cup drippy peanut butter
  • ¼ cup maple syrup
  • ½ scoop vanilla protein powder, I use Be Well By Kelly

"Caramel" filling

  • ½ cup cashew butter
  • ¼ cup maple syrup
  • 2 tbsp coconut oil

Chocolate topping

  • ¾ cup dark chocolate chips
  • 2 tsp coconut oil

Instructions
 

  • Add peanut butter & maple syrup to a small pot on a low heat and stir until combined.
  • Stir in rolled oats & protein powder. Then press into a lined muffin tin.
  • In a large bowl mix cashew butter, maple syrup and coconut oil. Once fully combined, spoon "caramel" mixture on top of oat mixture.
  • Melt chocolate & coconut oil together. Then spoon on top of caramel layer.
  • Place in freezer for 30 minutes to set.
