Chocolate Caramel No Bake Oat Cups
These treats are not only delicious but are no bake, made with a few simple ingredients, and packed with protein!
Ingredients
Base
- 1 cup + 2 tbsp rolled oats
- 1 cup drippy peanut butter
- ¼ cup maple syrup
- ½ scoop vanilla protein powder, I use Be Well By Kelly
"Caramel" filling
- ½ cup cashew butter
- ¼ cup maple syrup
- 2 tbsp coconut oil
Chocolate topping
- ¾ cup dark chocolate chips
- 2 tsp coconut oil
Instructions
- Add peanut butter & maple syrup to a small pot on a low heat and stir until combined.
- Stir in rolled oats & protein powder. Then press into a lined muffin tin.
- In a large bowl mix cashew butter, maple syrup and coconut oil. Once fully combined, spoon "caramel" mixture on top of oat mixture.
- Melt chocolate & coconut oil together. Then spoon on top of caramel layer.
- Place in freezer for 30 minutes to set.
