Coffee Toffee Ice Cream Cups

These ice cream cups are a dream! You only need 3 ingredients to make them, and they are low in sugar! You can meal prep them for the week and enjoy frozen.

Ingredients
 

  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil
  • 1 pint ice cream of choice, I used Enlightened Coffee Toffee

Equipment

  • 1 muffin pan
  • 6 muffin cups

Instructions
 

  • In a bowl melt chocolate chips and coconut oil. I melt mine in the microwave but you can also melt in a stovetop pot.
  • Pour half of the melted chocolate into 6 muffin tins. Place them in the freezer for about 15-20 minutes.
  • Take the chocolate out of freezer and add ice cream on top of chocolate layer. Next, add the rest of the melted chocolate mixture over ice cream until covered.
  • Place back into the freezer for 30 minutes. Enjoy!!
