Coffee Toffee Ice Cream Cups

Coffee Toffee Ice Cream Cups
These ice cream cups are a dream! You only need 3 ingredients to make them, and they are low in sugar! You can meal prep them for the week and enjoy frozen.
Ingredients
- 1 cup dark chocolate chips
- 1 tbsp coconut oil
- 1 pint ice cream of choice, I used Enlightened Coffee Toffee
Equipment
- 1 muffin pan
- 6 muffin cups
Instructions
- In a bowl melt chocolate chips and coconut oil. I melt mine in the microwave but you can also melt in a stovetop pot.
- Pour half of the melted chocolate into 6 muffin tins. Place them in the freezer for about 15-20 minutes.
- Take the chocolate out of freezer and add ice cream on top of chocolate layer. Next, add the rest of the melted chocolate mixture over ice cream until covered.
- Place back into the freezer for 30 minutes. Enjoy!!
