Tortellini Soup
My mom used to make this tortellini soup when I was growing up and it was always one of my favorites. It’s the perfect cozy, nourishing meal that is packed with veggies and complex carbs. My version is also gluten free but feel free to use normal tortellini as well.

Tortellini Soup
This tortellini soup is one my mom used to make growing up – it's the perfect cozy and nourishing meal that is packed with veggies.
Ingredients
- 1 tbsp olive oil
- 1 yellow onion, chopped
- 1 bell pepper, chopped
- 3 garlic cloves, minced
- 2 cups baby spinach
- 1 can navy beans
- 2 cups chicken broth
- 1 can fire roasted diced tomatoes
- 1 can artichoke hearts
- 1 package tortellini, I used Taste Republic gluten free
- 1 tsp italian seasoning
- ½ cup water
Instructions
- Heat oil in a large dutch oven over high heat. Add onion, pepper, garlic and italian seasoning. Saute 5 minutes or until tender. Add spinach, broth, beans, water, tomatoes and artichokes.
- Bring to a boil. Reduce heat and simmer 2 minutes. Add tortellini and cook until thoroughly heated.
- Optional: sprinkle with parmesan cheese.
