Green Goddess Salad
Starting with a base of dark, leafy greens for fiber, hemp & avocado for healthy fats, fresh herbs for antioxidants, and a kefir based dressing for probiotics and prebiotics. It has everything you need to support a healthy gut and it is SO delicious! I love using @Lifewaykefir organic plain kefir to make the dressing because of it’s incredible gut healing benefits. It also makes the creamiest most delicious dressing you’ll ever have.

Green Goddess Salad
This gut loving salad is the perfect nourishing lunch and it's so easy to throw together!
Ingredients
Dressing
- ½ cup @Lifeway organic plain kefir
- 1 avocado, pitted and peeled
- 2 tbsp lemon juice
- 1 bunch fresh basil
- 1 bunch fresh parsley, destemmed and chopped
- 1 handful fresh dill
- 1 clove garlic
- salt & pepper, to taste
Salad
- 1 bunch kale, destemmed and chopped
- 1 bag shredded Brussels sprouts
- 1 can cannelloni beans, rinsed and drained
- 1 handful pickled red onions
- 3-4 tbsp cranberries, no sugar added
- sprinkle hemp seeds
Instructions
Dressing
- Add all ingredients to a high speed blender and mix until smooth.
- Pour into a jar with a tightly sealed lid. Place in the refrigerator.
Salad
- Add kale to a big bowl and drizzle with olive oil, splash of lemon juice (optional), salt and pepper. Massage kale with your hands until it starts to soften. Set aside.
- Turn on broiler. On a baking sheet, add brussels and toss with olive oil, salt & pepper. Place on the top rack of the oven for about 3-5 minutes or until they start to slightly crisp (stay close to the oven so you can make sure they don't cook too long and burn).
- Add brussels in with massaged kale. Then add in pickled onions, beans, and cranberries.
- Lastly, drizzle with green goddess dressing and sprinkle on hemp seeds. Feel free to add in some grilled chicken for extra protein.
