What You Need to Make This Mediterranean Bowl with Lamb Meatballs & Avocado Salad

  • Extra Virgin Olive Oil: To cook the veggies. More is also used for the dressing.
  • Ground Lamb: For the meatballs we are going to use organic ground lamb, if lamb isn’t your thing you can swap it for grass-fed beef.
  • Red Onion: Finely diced. You will use some for the meatball mixture and some for the avocado salad.
  • Garlic: I use fresh garlic and mince it myself. In a pinch, use garlic paste.
  • Egg:  This will be used as a binder for the meatballs.
  • Fresh Herbs: You will use fresh parsley for the meatballs and add more for garnish. I also love adding fresh mint on top for garnish as well. For the avocado salad you will use fresh dill.
  • Minced Garlic: You can buy minced garlic or mince your own garlic cloves. It will be used in the meatballs and the dressing.
  • Red Bell Pepper: I love roasting halved red bell peppers for this bowl. Toss with olive oil and bake them in the oven until slightly charred.
  • Sweet Potato: Any sweet potato works, cut into 1 inch pieces.
  • Sumac Seasoning: I like to use ground sumac with the sweet potatoes, the flavor pairs so well with the Mediterranean flavor. You can substitute the sumac with lemon zest and a pinch of sea salt or ground paprika and vinegar.
  • Avocado: For the avocado salad, dice a slightly soft avocado. You don’t want it to be too ripe and mushy.
  • Cherry tomatoes: Halved. You can substitute with roma tomatoes.
  • Apple Cider Vinegar: This gives the dressing a little bit of tang. You can can sub with balsamic or white wine vinegar.
  • Shallot: You want to use a small shallot here so that it doesn’t completely overpower the dressing. Finely chopped or throw the whole thing in a high speed blender when making the dressing.
  • Dijon Mustard: This adds slight bitterness with a little hint of sweetness. The perfect balancing flavor.
  • Honey: If you find yourself wanting a little bit sweeter of a dressing, add in 1/2-1 tbsp of honey.
  • Salt and Pepper: To taste.

Mediterranean Bowls with Lamb Meatballs & Avocado Salad

Ingredients
 

Meatballs

  • 1 lb Ground Lamb
  • 1 small Onion, Grated or finely chopped
  • 1 Egg
  • 2 cloves Garlic, Minced
  • 2 tbsp Fresh parsley, Chopped
  • Salt & pepper, To taste

Bowls

  • 1 Red Bell pepper, Halved, seeds removed
  • 1 Sweet potato, Diced
  • 1 tbsp Olive oil
  • 1 tsp Sumac seasoning
  • ½ tsp Garlic powder
  • Pinch Salt

Avocado Salad

  • 1 Avocado, Chopped
  • ½ Red onion, Chopped
  • Handful Cherry tomatoes, Chopped
  • 2 Sprigs Fresh Dill

Dressing

  • 4 tbsp Extra virgin olive oil
  • 1 tbsp Apple cider vinegar
  • 1 small Shallot
  • 2 cloves Garlic
  • 1 tsp Dijon mustard
  • ½ tsp Honey, Optional
  • Salt & pepper, To taste

Instructions
 

  • Preheat oven to 425. Add all meatball ingredients to a bowl and mix with hands until fully combined, form into balls. Place on a greased baking sheet.
  • Season sweet potatoes with olive oil, sumac, garlic powder, and salt. Add to a separate baking sheet. Then add red bell pepper and drizzle with olive oil, place face down on baking sheet.
  • Place both baking sheets in oven and bake for about 25-30 minutes. (I do them separately because the lamb gets greasy on the pan.)
  • While the food is baking, prep the dressing and avocado salad. Add all dressing ingredients into a food processor or high speed blender. Blend until fully combined.
  • Take veggies and meatballs out of the oven and assemble bowls. Add avocado salad and drizzle with dressing. Add feta cheese if you desire and more fresh herbs.
