Creamy Lemon Dill Cucumber Salad

This summer salad is the perfect addition to any meal. It's light, fresh, and packs a gut healthy punch. The dressing is made using Lifeway Kefir Grass-fed Organic Kefir, which is loaded with probiotics and prebiotics to support a healthy balance of bacteria in your gut microbiome.

Ingredients
 

  • 1 Large English Cucumber, Sliced
  • 2 Small Red onion, Finely diced
  • 3 Tbsp Fresh Dill, Chopped
  • ¼ Cup Lifeway Grass-fed Organic Kefir
  • 2 Tbsp Lemon Juice
  • 1 Tsp Apple Cider Vinegar
  • 1 Tsp Dijon Mustard
  • 2 Cloves Garlic, Minced
  • Salt & Pepper, To taste
  • Dash Maple Syrup, Optional to slightly sweeten

Instructions
 

  • Add dill, yogurt, kefir, lemon juice, apple cider vinegar, dijon, and garlic to a high speed blender and mix until fully combined.
  • Add cucumber and red onion to a large bowl. Pour dressing over and toss until fully combined.
  • Top with fresh dill and season with salt & pepper, to taste.
