Creamy Lemon Dill Cucumber Salad
This summer salad is the perfect addition to any meal. It's light, fresh, and packs a gut healthy punch. The dressing is made using Lifeway Kefir Grass-fed Organic Kefir, which is loaded with probiotics and prebiotics to support a healthy balance of bacteria in your gut microbiome.
Ingredients
- 1 Large English Cucumber Sliced
- 2 Small Red onion Finely diced
- 3 Tbsp Fresh Dill Chopped
- 1/4 Cup Lifeway Grass-fed Organic Kefir
- 2 Tbsp Lemon Juice
- 1 Tsp Apple Cider Vinegar
- 1 Tsp Dijon Mustard
- 2 Cloves Garlic Minced
- Salt & Pepper To taste
- Dash Maple Syrup Optional to slightly sweeten
Instructions
- Add dill, yogurt, kefir, lemon juice, apple cider vinegar, dijon, and garlic to a high speed blender and mix until fully combined.
- Add cucumber and red onion to a large bowl. Pour dressing over and toss until fully combined.
- Top with fresh dill and season with salt & pepper, to taste.
