“Cheesy” Roasted Broccoli
I challenge any veggie haters to not devour these crispy, "cheesy" roasted broccoli florets! They are made dairy free by using nutritional yeast and packed with nutrients.
Ingredients
- 2 heads broccoli, cut into florets
- 3 tbsp almond flour
- 4 tbsp nutritional yeast
- 4 tbsp extra virgin olive oil
- salt , to taste
Instructions
- Preheat oven to 425. In a large bowl toss broccoli with olive oil, nutritional yeast, almond flour, and salt. Make sure it is evenly coated.
- Spread broccoli over a baking sheet. Once the oven is preheated, bake for about 25-30 minutes. I like mine crispy.
- Enjoy!
Notes
Nutritional yeast is an incredible superfood that gives this dish a nutty, cheesy flavor. Let’s break down some of the amazing benefits of nutritional yeast:
- Contains anti-bacterial & anti-viral properties
- Improves digestion
- Helps preserve immune function
- Good source of protein – containing at least 9 of the 18 essential amino acids that the body can’t produceÂ
- High in B vitamins – B12, thiamine, riboflavin, vitamin B6 and folate. All of which  are key vitamins crucial to cell metabolism, mood regulation, nerve function and more, but they’re also critical to ensuring a healthy pregnancy.
