Chicken Fried Cauliflower Rice

This healthier take on chicken fried rice is gluten free and grains free but does not lack in flavor! It is loaded with veggies & protein and has quickly become a favorite in our house.

Ingredients
 

  • 1 bag cauliflower rice
  • ½ cup frozen peas
  • ½ cup fresh or frozen shredded carrots
  • 2 chicken breasts, cubed
  • 2 eggs
  • 4 tbsp gluten free tamari or coconut aminos
  • 1 tbsp avocado oil
  • ¼ cup green onions, chopped

Instructions
 

  • Heat avocado oil in pan at medium, high heat. Place chicken in skillet and add 1 tbsp coconut aminos. Cook for about 5-7 minutes or until browned on all sides.
  • Remove chicken and set aside, add all the veggies to the pan and cook until hot, add the rest of the coconut aminos.
  • Place cooked chicken back in the pan and crack two eggs into the cauliflower rice and stir to cook.
  • Top with green onions.
