Ingredients You’ll Need for These Cookies

As I mentioned, these cookies are made with only a few simple ingredients that you probably have in your kitchen already.

  • Peanut Butter: When it comes to peanut butter, you want to choose a creamy one that is runny and made with only 1 ingredient (peanuts).
  • Organic Cane Sugar: Organic cane sugar with slightly sweeten these nutty cookies. It also helps to brown them.
  • Organic Egg: Use fresh organic eggs if possible. These will help bind the cookies.
  • Dark Chocolate: Choose a dark chocolate that is made with minimal ingredients and is over 75% cocoa.
  • Coconut Oil: Coconut oil helps the chocolate to melt smoothly and hard after you dip the cookies.

How to Make These Peanut Butter Cookies

All you need to make these cookies is a medium sized mixing bowl, spatula, fork, and baking sheet. I also like to use parchment paper to prevent the cookies from sticking.

  1. Make the cookie dough.
    • Add the sugar, egg, and peanut butter to a medium sized mixing bowl. Stir until combined.
  2. Prep the cookies.
    • Preheat oven to 375 and add parchment paper to a baking sheet. Scoop up dough and roll into about a ball (about 1 inch).
    • Place on baking sheet and flatten with your palm. Use the back of a fork to make criss cross lines on the cookies.
  3. Bake & cool the cookies.
    • Place cookies in the oven and bake for 7-10 minutes. Then allow to completely cool.
  4. Make the chocolate.
    • Add chocolate and coconut oil into a small microwave safe bowl. Microwave for 30 seconds, stir well. You want there to still be some unmelted chips, they will continue to melt as you stir. Add back to microwave for a few more seconds if needed.
  5. Dip the cookies.
    • Once the cookies have completely cooled, dip half in the chocolate. Place on plate and allow chocolate to harden.
  6. Enjoy!
    • After dipping the cookies and letting the chocolate harden dive in!

Popular Substitutions

  • Nut Butter: Feel free to sub the peanut butter with any nut butter of choice. I commonly make these with a runny almond butter. Sunflower seed butter is a great nut free choice.
  • Coconut Sugar: You can sub the coconut sugar with organic cane sugar or brown sugar.
  • Dark Chocolate: Use any chocolate you desire or opt out of using chocolate at all. These cookies are incredible on their own.

3 Ingredient Peanut Butter Cookies

There are few things I love more than peanut butter so obviously these cookies are a favorite of mine! Plus they are easy to make and all you need is three ingredients. I recommend dipping them in chocolate, thank me later!

Ingredients
 

  • 1 egg
  • 1 cup peanut butter
  • ¾ cup coconut sugar
  • ½ cup dark chocolate chips

Instructions
 

  • Preheat oven to 350. Mix all ingredients in a big bowl.
  • Roll into balls and place on a greased cookie sheet. Press fork into cookies creating a criss cross.
  • Bake for 10-12 minutes. Let completely cool.
  • While the cookies are cooling, melt chocolate. Once fully cooled, dip in melted chocolate.
  • Allow chocolate to harden and cool. Enjoy!
