These no bake pumpkin cookies are made using only a handful of ingredients and take less than 5 minutes to throw together! Plus they are high in protein and absolutely delicious. Prep them for the week for the perfect treat on the go!
Combine all ingredients. Add all ingredients to a large bowl and mix until fully combined.
Form into cookies. Once combined, form the dough into balls or cookies. Then place in the fridge for about 30 minutes.
Enjoy! After the no bake pumpkin cookies have cooled in the fridge they are ready to eat! Enjoy.
Notes
These no bake pumpkin cookies are incredibly versatile. Add in whatever other mix-ins you'd like. Some things I think would be delicious: dried cranberries, raisins, shredded coconut, crushed nuts or white chocolate chips.
For the protein powder I love doing vanilla protein to add a delicious flavor, you can use your favorite protein powder. Vegan protein may alter the consistency.
You can sub the peanut butter with any other nut butter. If you are nut free you can sub with tahini.
Store in the fridge in a glass airtight container for up to a week. I also love to freeze these to always have them on hand. Freeze in a freezer safe container for up to 3 months.
