Ingredients & Substitutions
- Canned pumpkin. 1/4 cup of canned pumpkin is needed for these no bake pumpkin cookies. Make sure you are choosing organic canned pumpkin and not pumpkin puree.
- Peanut butter. 1/4 cup of peanut butter. Choose a runny peanut butter that has only two ingredients (peanuts and salt).
- Rolled oats. 3/4 cup of rolled oats. Choose organic oats when you can. If you are gluten free, make sure you choose certified gluten free oats.
- Vanilla protein powder. 1 scoop of vanilla protein powder. I have only made this with animal based protein powder. You can use protein powder of choice but the vanilla pairs super well with these flavors.
- Maple syrup. 2 tbsp of maple syrup. Can use honey as well.
- Dark chocolate chips. 1-2 tbsp of chocolate chips.
- Cinnamon. A pinch of cinnamon to add to the flavor, optional.
How to Make
Step 1
Combine all ingredients. Add all ingredients to a large bowl and mix until fully combined.
Step 2
Form into cookies. Once combined, form the dough into balls or cookies. Then place in the fridge for about 30 minutes.
Step 3
Enjoy! After the no bake pumpkin cookies have cooled in the fridge they are ready to eat! Enjoy.

- These no bake pumpkin cookies are incredibly versatile. Add in whatever other mix-ins you’d like. Some things I think would be delicious: dried cranberries, raisins, shredded coconut, crushed nuts or white chocolate chips.
- For the protein powder I love doing vanilla protein to add a delicious flavor, you can use your favorite protein powder. Vegan protein may alter the consistency.
- You can sub the peanut butter with any other nut butter. If you are nut free you can sub with tahini.
- Store in the fridge in a glass airtight container for up to a week. I also love to freeze these to always have them on hand. Freeze in a freezer safe container for up to 3 months.
