This creamy tuscan gnocchi is the perfect comforting weeknight dinner. It is so cozy and made with wholesome ingredients. Plus it truly couldn't be easier to make and all you need is one pot! This dinner is packed with protein, fiber, fat, and plenty of veggies so you can feel good eating it.
Cook the aromatics. Add butter or oil to a large pot and heat over a medium high heat. Once butter is melted, add onions then cook until soft. Next add garlic, cook for 1-2 minutes.
Add the ground chicken. Add ground chicken to the pan. Cook for about 5-7 minutes or until browned, breaking up as you go.
Add tomato paste, kale, and seasonings. Next, add tomato paste and seasonings. Stir until fully combined then add in kale.
Pour in heavy cream and bone broth. Pour in heavy cream and bone broth and bring to a simmer. Once simmering, add in gnocchi. Stir occasionally until the gnocchi is tender.
Stir in lemon juice and parmesan. Remove from heat and stir in parmesan and lemon juice.
Serve and enjoy! Ladle the tuscan gnocchi into bowls. Top with fresh parmesan.

When cooking the aromatics, make sure you cook slowly at a low heat to keep from burning them. This helps to release flavor!
I used ground chicken and seasoned on my own so I knew what was going into it, but you can use a ground chicken sausage if you find one with good ingredients.
Cooking with bone broth gives an extra boost of protein and minerals to the dish.
After adding the gnocchi, make sure you stir occasionally so it doesn't clump together. Cook until tender (this took mine about 5-6 minutes).
