Salted Tahini Cookie Dough Ice Cream Bites

Salted Tahini Cookie Dough Ice Cream Bites
These bites combine two of my all time favorite things - chocolate chip cookie dough & ice cream! Plus they are lower in sugar which is always plus.
Ingredients
- 1 cup tahini, runny
- ¼ cup coconut oil, melted
- 2 tbsp pure maple syrup
- ½ tbsp vanilla extract
- ¼ tsp salt
- ¼ cup dark chocolate chips
- 1 pint ice cream, I used Eat Enlightened Brownie & Cookie Dough Ice Cream
Instructions
- Line two 8x4 inch loaf pans with parchment paper.Â
- In a medium bowl, mix together the tahini, coconut oil, maple syrup, vanilla and salt until well combined. Then fold in chocolate chips.Â
- Pour the fudge into both pans evenly. Press them in a bit if necessary. Freeze for about 30 minutes.
- While the fudge is freezing, remove pint of ice cream and thaw for about 10 minutes.Â
- Remove fudge and scoop ice cream into one loaf pan on top of fudge. Spread until smooth and then top with other layer of fudge.Â
- Place back in the freeze for about 15 minutes. Remove & cut into bite size pieces. (I like running the knife under hot water). Enjoy!!
- Store in the freezer.Â
